Belize’s food is its own thing — a Caribbean, Maya, Mestizo, and Garifuna blend. Don’t leave without trying:

Seasons to know Belize protects its fisheries with closed seasons. Spiny (Caribbean) lobster is generally open July 1 to the end of February. Conch is generally open October 1 to June 30 (and can close early if the national quota is reached). Outside those windows you may see imported or frozen versions, or it’s simply off the menu — a good sign a kitchen is sourcing responsibly.

One only-in-Belize night out

The Chicken Drop is a San Pedro institution: a numbered grid, a wandering chicken, and good-natured betting on which square it, ahem, "drops" on — winner takes the pot. It has long been a weeknight tradition at Wahoo’s Lounge; the venue and night have shifted in recent years, so check locally for the current schedule. Silly, harmless, and very Belize.

A few practical notes

Most places are casual and cash-friendly (US dollars are accepted everywhere, with change in Belize dollars), though more spots take cards now. Getting around is by golf cart, including the partly unpaved run out to Secret Beach. In high season, book ahead for the more popular sit-down dinners.
