How it works

The menu is settled before you land

After you book, you fill in a short pre-arrival form: who is coming, what they eat, which lunches and dinners you want cooked and which nights you will be out. That is how the ingredients are stocked for your selected meals.

  • Breakfast is included daily; lunches, dinners and cocktails are priced per dish and per drink and shown before you pay
  • Vegetarian and vegan versions of every dish; allergies and children's plates noted on the form
  • Change your mind on the island — Delma and Everaldo are there every day
  • We do not pre-stock groceries, but we are happy to recommend stores if you ask, and the kitchen is yours for self-catering
The food

From Delma's kitchen

Belizean cooking with the sea in front of it: the day's catch, lobster and conch in season, Marie Sharp's on the table. Our taste of Belize guide explains the dishes.

Two people who make the villa what it is

Delma is the villa's full-time chef; Everaldo runs the bar, the grounds and the logistics. They live on the island, they are at the house every day, and the reviews mention them by name.

  • Breakfast on the terrace or at the table for twelve
  • Dinner at the chef's table, on the dock or by the pool
  • Restaurant bookings, boat captains and tours arranged for you
  • Groceries bought for your selected meals; you never shop
A sample day

What a day with a chef on site looks like

7:30 — Coffee is on. Breakfast lands on the terrace as people surface: fruit, eggs, oatmeal, juice. 10:00 — Paddleboards off the dock, or the boat Everaldo booked collects you for Hol Chan. 1:00 — Lunch by the pool if you chose one on the form, or the beach clubs fifteen minutes' walk away. 5:30 — Everaldo mixes the first round on the dock as the sun drops. 7:00 — Dinner at the chef's table; lobster if it is in season, your catch if you brought one. 9:00 — Fire tables on the upper terrace. Nobody has been to a shop.

Good to know

Chef and dining questions, answered

Is the chef included in the villa rate?

Delma and Everaldo are on site every day and a chef-prepared breakfast is included for everyone. Lunches, dinners and cocktails are optional and priced per dish and per drink, chosen on the pre-arrival form and shown before you pay.

How are meals chosen?

On a short pre-arrival form after you book: who is coming, dietary needs, which lunches and dinners you want and which nights you will eat out. All meals, breakfast included, are arranged there so the ingredients are stocked for your selected meals.

Can the chef cook for special diets?

Yes. Vegetarian and vegan versions of every dish, and allergies noted on the form are planned around. Children's favourites — pizza, nuggets, burgers, hot dogs — are on every menu.

Can we cook for ourselves?

Any time. The chef's kitchen is open to guests. We do not pre-stock groceries, but we are happy to recommend stores if you ask.

Will the chef cook fish we catch?

Yes. Fish from the flats or the reef goes straight to the kitchen and comes back at dinner.

Is there a bar at the villa?

Yes, with Everaldo behind it. Cocktails, mocktails and smoothies are mixed at the bar, on the pool deck or at the end of the dock, priced per drink. Welcome cocktails for the whole party are on us when you book direct.
